What's for dinner?

Well my dinner wasn't as extravagant as some may seem.  However I figured I would give you a recipe for a bake "faux" rotisserie chicken.

Okay what I do for this I make a rub for my chicken.  It has to be a whole roaster chicken.  Now this requires your favorite banking dish, and a rack.  One major rule with to remember, you can't have the chicken sitting directly on the pan, it will just be a hot mess.  Now set up your pan and rack and place the chicken on the rack.

For our rub we will need:
1/2 cup Vegetable oil
Italian seasoning (sometime I use the flavored Ms. Dash products, Tomato Basil is a good one)
Garlic Salt
Onion Powder
Sea salt
Pepper

You are going to combine these in the veggie oil and make what looks to be a loose paste.  Now you are going to use a brush or hands (which I use after thoroughly washing) and coat the outside of the bird, and also coat the inside of the bird.  Now you put this in a 375*F oven and cook until temperature reaches 165*F.  You should actually check two spots for this.  The thigh and the breast (for turkey it is thigh, breast and stuffing if you have it)

For this particular recipe I would also highly suggest that you rotate the bird half way through.  This means to pull the pan out and turn it 180* left or right, not to actually lift the hot bird up.  Once the bird is fully cooked let it rest for about 10 minutes and then serve.

For an added bonus: the drippings at the bottom of the pan, pour that into a sauce pan and then let it come to a boil.  Take corn starch or flour (to where it equals about 1/2 a cup) and add it to water.  It should look like a milk consistency and then add it to your drippings.  Let it return to a boil and thicken for about 5 minutes and you have an awesome chicken gravy.
