What sounds good?

I am sitting in class, thinking about what sounds really good at the moment.  I determined that am in the mood for muffins.  Too bad I can't afford this as this particular time.  Either way here is the recipe for Sour Cream Blueberry Muffins:

 

1# 11 oz. Sour Cream

4 Eggs

1# 3 1/2 oz. sugar

12 oz. Brown Sugar

12 oz. Vegetable Oil

2# 9 oz. A.P. Flour

1 1/2 oz. Baking Powder

1/2 oz. salt

Blueberries

 

 

Place dry ingredients into a stand alone mixing bowl.

Mix dry just until incorporated.

Place the paddle attachment on to the mixer, and secure bowl onto stand(if not done already)

Mix wet ingredients in a seperate bowl

Turn mixer to a low speed and add wet ingredient to dry slowly

Once all has been added, mix about 1 minute longer (DO NOT OVERMIX)

Add blueberries or berries and/or nuts of your choice by hand liberally.

Place cupcake tin or paper inside cup cake pan, or grease pan when no paper is present.

Cook in 400*F until wooden toothpick comes out clean or golden brown on top.

Let cool about 5 to 7 minutes and eat.

(Remember baking is a science, so it has to be acurate measurements.)
