"Hooters" wings?

Okay so I love to try new things in the kitchen and sometimes trying to make iconic recipes is a wonderful challenge.  Tonight I decided to try and make my own version of "Hooters" chicken wings, and was hoping it would cost me less than I would pay in store.

 

30 Wings

1 Gallon Vegetable Oil (for deep fryer)

1 Bottle Texas Pete Extra Mild Buffalo Wing Sauce

Butter (melted)

Flour

Milk

Season Salt

 

Okay so I have watched them make these quite often in my time, and think I have something quite close.  I deviate just a little.

 

First thing you are going to do is prepare your wings.  Most of the wings come in packages where the drumette and the flat wing are still connected.  To prepare them all you are going to do is cut them apart.  This will actually give you about 60 wing pieces so you can have guests over if you like.

Next you want to place flour in a sealable container, and add season salt to it.  I tend to lean towards the heavy side on this one cause it will mix in with the flour.

Okay so make sure you also have a bowl of milk at the ready too.  After that I put my Texas Pete in a small bowl and added melted butter (this is an optional step it help moderate the flavor if you have a sensitive pallet to sort of spicy items).

Now last you place the oil in a deep fryer (or if you have an oil in a deep fryer already) and then heat to 360*F.  On my fryer it actually has a small picture to dictate where you place your temperature for poultry.  Now once that is heated you place 5 to 6 wing pieces in the milk and allow them to get wet.  Next you place in the flour and season salt.  Put the lid on and shake until nicely coated.  Now we are going to put these in a collander and shake off the excess flour.  Now we are going to cook them until they reach 165*F.

Once done you place in the Texas Pete hot.  Fully coat the chicken wings, and place on a plate of in a bowl.  Continue to do the steps with the ramaining chicken until no more chicken remains.

Once this is down you can dish up a plate and enjoy what ever game you like or company you may have.
